RECIPES DEMONSTRATED:

Berry Delicious Overnight Oats
Servings – 1
Prep Time – 5 minutes (then refrigerate overnight)
INGREDIENTS
Base
• 1 small banana, smashed.
• ½ cup rolled old fashioned oats.
• 1 tablespoon homemade protein powder*.
• ¼ teaspoon ground cinnamon.
• 1 cup milk of choice.
• 1/2 teaspoon vanilla extract.
Options - (You can choose whatever add-ons you like!)
• 1/2 cup diced fruit (apples, pears in the winter / blueberries, strawberries, mangoes in the summer.)
• 1 tablespoon raisins, goji berries, other dried fruit (watch added sugar.)
• 1 tablespoon nuts, chopped (walnuts, pecans, etc.)
INSTRUCTIONS
1. Place banana, oats, protein powder and cinnamon into your container and mix until combined.
2. Add milk and vanilla and mix in.
3. Add any of the options you choose.
4. Cover the container and place in the refrigerator overnight.
5. Uncover and enjoy the next day. Thin with a little more milk if desired. If you prefer, you can heat it up and have it warm.
NOTES –
• This is really versatile. You can change any of the options or choose other options.
• The smashed banana is your sweetener. If you don’t use the banana you may want to add some other sweetener such as maple syrup, honey, even pureed dates.

DIY Vegan Protein Powder
Prep Time: 10 minutes
Ingredients
• 1/2 cup hemp seeds
• 1/4 cup flaxseed
• 1/2 cup chia seeds
• 1/2 cup pumpkin seeds
• 1/2 cup sunflower seeds
Instructions
1. Grind each ingredient separately (in a coffee grinder or spice grinder) and set aside.
2. Mix all ingredients together.
3. Store in an air-tight container in the refrigerator.
NOTES –
• Not all of the ingredients grind up at the same rate so grinding them separately will avoid over processing.
• This will keep in an air-tight container in the fridge for about a month or you can freeze it for up to 6 months.
• Not only does this powder add a lot of protein to your foods, but the seeds also bring in many vitamins and minerals.
• This will not dissolve in water or other liquids because it will remain grainy... BUT you can add it to smoothies, oatmeal, muffins, breads, etc
• Each tablespoon provides about 5 grams of protein, almost the equivalent of one egg.

Put the Berry in The Coconut…
Prep Time: 5 minutes
Makes: 48 oz.
Ingredients
• 3 cups blueberries
• 3 bananas
• 6 tablespoons (homemade) protein powder
• 1 can (1 ½ cups) coconut milk (the cooking kind, not the drinking kind – see notes)
Instructions
1. Put all ingredients into blender and blend until smooth.
2. Drink!
NOTES –
• Make sure that the coconut milk you’re using is the canned variety, not the milk alternative variety. (We’re looking for the coconut milk you would use for cooking here, like when you make a curry.)
• To up the nutrients, you can add greens and or nut butters to this as well. You would need to add more liquid (You could add a milk of your choice. Califia makes a nice almond-coconut milk-alternative that would work nicely here as an additional liquid.)
• You can make this ahead of time and refrigerate or freeze in jars. If freezing, make sure you leave about an inch of space or the glass will break.
• When you make this ahead of time it will thicken up. Any milk or milk alternative of your choice will work to thin it out.
