🥘 Super Easy and Tasty Meat with Vegetables (Tray Bake)
Ingredients
2 lbs (900g) beef (cut into large cubes)

1 white onion, thickly chopped

1 red onion, thickly chopped

1 green bell pepper, sliced into wide strips

1 red bell pepper, sliced into wide strips

3 whole garlic cloves

1 large tomato, cut into medium chunks

Olive oil, to taste

For the seasoning paste
1 tsp sweet paprika

1 tsp oregano

1 tsp garlic powder

1 tsp coloring spice (e.g., annatto or turmeric)

1 tsp black pepper

1 tsp salt

Olive oil (enough to create a thick paste)

Instructions
Prepare the Tray
In a large oven-safe tray, add:

The cubed beef

Both types of onions

Bell peppers

Whole garlic cloves

Tomato chunks

Mix the Ingredients
Use your hands to gently mix everything together in the tray. This ensures the meat and vegetables are evenly combined and layered nicely.

Make the Seasoning Paste
In a small bowl, add all the spices: paprika, oregano, garlic powder, coloring spice, black pepper, and salt.
Add olive oil gradually and mix until a paste forms. It should have a smooth, spreadable consistency.

Season the Tray
Pour the spice paste over the meat and vegetables. Mix thoroughly (again, hands work best!) to coat everything evenly with the seasoning.

Bake - First Round
Preheat the oven to 350°F (175°C).
Bake the tray uncovered for 40 minutes.

Stir and Re-Bake
After 40 minutes, remove the tray and give everything a good stir to mix in the juices from the bottom. This step helps brown the top layer evenly.
Return to the oven and bake again for another 15–20 minutes, or until nicely browned.

Final Touches
Once done, stir everything gently one last time to coat all ingredients with the natural juices.
Leave a little bit of juice for moisture—this acts like a flavorful natural sauce.

Serve and Garnish
Finish with freshly chopped parsley (and chives, if desired) for a fresh and colorful touch.
Serve hot, ideally with white rice, crusty bread, or even on its own.

🍴 Tips
You can substitute beef with chicken thighs or lamb cubes.

For added heat, include chili flakes or a fresh chopped chili.
