How to make BEEF STROGANOFF
Beef Stroganoff is a Russian dish consisting of thin sliced beef strips sautéed in a sour cream sauce.
There's been a host of variations of this recipe over the years and maybe I didn't make it exactly the way someone's mama would have in Russia, but if you don't tell, I won't!
Here's what's in the dish I made. You may need to change it if you aren't cooking for 5 people but who doesn't like leftovers!

INGREDIENTS
3 1/2 pound chuck roast
1 1/2 cups sour cream for the pot
sour cream for each serving
2 Tbsp. Olive Oil
2 Tbsp. Butter
6 toes garlic chopped
2 medium onions chopped
2 Tbsp. Emeril's Essence
1 Tbsp. Paul Prudhomme's Steak Magic. I love the hint of smoke in this spice.
1 Tbsp. Salt and Pepper for the pot
1 Tsp. Salt and pepper for onions
1 Tbsp. Salt and pepper for meat
4 Tbsp. All purpose flour
2 Boxes 8 Cups, Beef stock No Sodium
1 pound Portabella mushrooms chopped in half or thirds
1-2 cups dry red wine
1/4 cup fresh Italian flat leaf parsley. Reserve some for garnish.

COOKING INSTRUCTIONS
Slice meat into bite sized strips. Season with salt and pepper
In a large pot, melt butter and add oil. When slightly smoking, add meat but do not over crowd
the pot. Let the meat brown for 2-3 minutes. The meat must be browned on both sides.
Continue this until all meat is browned. Reserve meat.
In that same pot, add 2 Tbsp. butter and a cup of wine. Sauté onions until they are browned. This may and probably will take 10 or more minutes. If necessary, add more wine and continue until all onions are browned.
Next, add garlic. Stir in well. Then add the flour and incorporate into onions.
Add all beef stock and bring heat up to create a boil.
Then simmer and stir until the flour is well blended.
Add mushrooms, meat and parsley.
Transfer the pot to a 350 degree F oven for 2 hours.
At that point, remove the pot and mix in at least 1 or more cups of sour cream.
Add salt and pepper to your taste.
Serve over butter noodles with a dollop of sour cream.
Garnish with some fresh parsley.
