chilla (or cheela) is a savory Indian pancake often made from besan (gram flour) or moong dal (lentils). It's a popular, protein-rich breakfast or snack.
Classic Besan Chilla Recipe
This recipe uses gram flour and a mix of vegetables for a quick, healthy meal.
Ingredients
1 cup besan (gram flour)
1/4 cup each, finely chopped: onion, tomato, and carrot (or capsicum/bell pepper)
1 green chili, finely chopped (adjust to taste)
1 tsp grated ginger
Handful of fresh coriander leaves, chopped
Seasonings: 1/2 tsp cumin seeds or carom seeds (ajwain), 1/8 tsp turmeric powder, salt to taste
Approx. 1 cup water (as needed for batter consistency)
Oil or ghee for cooking
Instructions
Prepare the batter: In a large mixing bowl, combine the besan, all the chopped vegetables, ginger, green chili, and seasonings.
Mix in water: Gradually add water while whisking continuously to form a smooth, semi-thick batter of pouring consistency, similar to a dosa or pancake batter. The consistency is key—it should not be too thick or too thin.
Heat the pan: Heat a non-stick pan or a well-seasoned iron tawa (griddle) over medium heat. Grease lightly with a few drops of oil.
Cook the chilla: Pour a ladleful of the batter onto the hot pan. Gently and quickly spread it in a circular motion to form a thin, even circle.
Add oil and flip: Drizzle a little oil or ghee around the edges and a few drops on top. Cook for 1-2 minutes until the edges start to leave the pan and the base turns light golden.
Finish cooking: Flip the chilla over and cook for another 1-2 minutes on the other side, pressing gently with a spatula to ensure even cooking.
Serve: Remove from the pan and serve hot.
Chillas are best served immediately with mint chutney, tomato ketchup, or a side of yogurt.
Variations
Oats Chilla: Substitute gram flour with a coarse powder made from ground oats for a different texture.
Moong Dal Chilla: Use a batter made from yellow split lentils (moong dal) that have been soaked and blended into a smooth paste.
