FRESH SALMON CAKES
3 tablespoons olive oil, divided
¼ cup minced onion
2 tablespoons minced red bell pepper
2 tablespoon minced celery
Salt and pepper, to taste
1 tablespoon capers
1 ¼ pounds fresh salmon, coarsely chopped
¼ cup mayonnaise
¼ cup plus 1 tablespoon panko breadcrumbs, divided
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 pinch cayenne pepper
1 tsp Old Bay seasoning
INSTRUCTIONS:
Mix the salmon, onion, bell pepper, celery, capers, mayonnaise, ¼ cup panko, garlic, mustard, cayenne, Old Bay seasoning, salt, and ground black pepper together in a bowl until well-mixed. Cover the bowl with plastic wrap and chill for 45 minutes to 2 hours. Form the salmon mixture into round cakes then cover each patty with the remaining panko bread crumbs. Heat olive oil in a skillet over medium heat. Cook until golden and cooked through, 3 to 4 minutes per side.

Cream sauce for salmon
1 lg shallot - minced
4 cloves minced garlic
Fresh dill
1/2 cup Vermouth
1/3 cup Heavy cream
Salt & Pepper to taste
Extra Virgin Olive Oil
2 Tbsp butter
Optional - capers
Add oil and butter to sauté pan and preheat. Add shallots and garlic. Let sautée until soft and fragrant. Add vermouth and let it simmer and cook down. Once cooked down add heavy cream, dill and SPG and bring to a simmer stirring often. Let cool and it will thicken. Spoon over salmon or any grilled or blackened fish or shrimp.
