COCONUT MACAROONS:
1 1/2 cups flaked coconut
2/3 C. sugar
2 egg whites
1/2 teaspoon vanilla
1/2 teaspoon almond extract
Mix all ingredients well. Roll into balls or drop by spoonfuls onto well-greased cookie sheet. Bake at 325 degrees for about 20 minutes or until outer surface is golden. It's that easy!

Looking for flourless gluten free cookie recipes? This traditional coconut macaroon recipe has been around a long time but you may not have realized how easy they are to make. We decided to make a batch using Mom's new "Perfect Bake" system which measures the ingredients automatically with a couple special gadgets, but don't worry...This recipe is fast and easy even if you don't have one. In this video, we'll tell you the measurements of each ingredient just like always.
It's easy. Let me show you how...
First, measure 1-1/2 cups flaked coconut into a bowl. You'll need to add 2 egg whites to the coconut flakes. Because we're not using the yellow egg yolk, the cookies will be whiter AND lighter.
Then add 2/3 cups sugar. Since we were using our new "Perfect Bake" system, we had fun watching the app tell us when we had added enough. Pretty cool. Then we added 1/2 teaspoon vanilla and 1/2 teaspoon almond extract...and that's it!
We mixed all the ingredients really well so all of the coconut in the bowl was gooey. You can roll the mixture into balls or drop by spoonfuls onto well-greased cookie sheet. Bake at 350 degrees for 20 minutes or until outer surface is really golden. The texture of these cookies is so amazing...crunchy on the outside and chewy on the inside. So even though we used our fancy "Perfect Bake" system to make these delicious gluten free cookies, if you just follow this simple recipe, you'll be making "perfect" coconut macaroons too!
