Al-Faham-Chicken
Whole Chicken: 3 ( 3 kg)
(1 kg each)
Hund curd: 3/4 cup
Garlic paste: 3 tbsp
Ginger paste: 1.5 tbsp
Black salt: 1.5 tsp
Cumin powder: 3 tsp
Chat masala: 3 tsp
Salt to taste
Red chilly powder: 2.5 tbsp
Carom seeds: 1 tsp
Dry Fenugreek leaves: 1.5 tbsp
Lemon juice: 3 to 4 tbsp
Mustard oil: 1/4 cup
Chickpea flour: 4 tbsp
Marinate the chicken for 24 hours for better results.
Bake the chicken in oven at 200’c for 1 hour

Bombay Biryani Recipe

Ingredients
• Mutton: 2 kg
• Onion (finely sliced): 800 g
• 600 g for Barista (fried onions)
• 200 g for cooking the meat
• Oil: 600 ml
• Black peppercorns: 10–15
• Star anise: 2
• Cloves: 4–5
• Green cardamoms: 4–5
• Black cardamom: 1
• Bay leaves: 4–5
• Garlic paste: 4 tbsp
• Ginger paste: 2 tbsp
• Green chilli paste: 2 tbsp
• Salt: to taste
• Red chilli powder: 2 tsp
• Coriander powder: 1.5 tsp
• Tomatoes (chopped): 2 large
• Dry plums: ¼ cup
• Curd (yogurt): 500 g
• Shan Bombay Biryani Masala: 2 packets
• Basmati rice: 1.3 kg
• Cumin seeds: 2 tsp
• Kewra water: 1.5 tsp (mixed with red food colour)
• Fresh mint leaves: as required
• Green chillies: as required
• Ghee: 4–5 tbsp

Method

Step 1: Prepare the Mutton Curry
1. Heat oil in a large pot. Add 200 g sliced onion and fry until golden.
2. Add black peppercorns, star anise, cloves, green cardamoms, black cardamom, and bay leaves. Sauté for a minute.
3. Add garlic paste, ginger paste, and green chilli paste. Fry until fragrant.
4. Add mutton and cook until sealed.
5. Add salt, red chilli powder, coriander powder, and chopped tomatoes. Cook until tomatoes are soft.
6. Once the meat is tender, add dry plums and some fried onion (from the Barista).
7. In a bowl, whisk curd with 2 packets of Shan Bombay Biryani Masala. Add this mixture to the curry.
8. Adjust spices (salt and chilli) and add some water. Cook on high flame for 5–10 minutes.

Step 2: Boil the Rice
1. In a large pot, boil water. Add cumin seeds, black peppercorns, bay leaves, and green cardamoms.
2. Add washed rice and cook until 70% done. Remove some rice water and add it to the meat curry.
3. Cook another portion of rice until 90% done for layering.

Step 3: Layering the Biryani
1. In a large pan, spread the mutton curry at the base.
2. Add the first layer of 70% cooked rice. Top with fried onions and mint leaves.
3. Add the second layer of 90% cooked rice. Garnish with fried onions, mint leaves, and green chillies.
4. Sprinkle kewra water mixed with red food colour and drizzle ghee over the rice.

Step 4: Dum Cooking
1. Cover tightly and cook on high flame for 8–10 minutes.
2. Reduce to very low flame and cook for 15–20 minutes.
3. Mix gently before serving.

Mutton Qorma Recipe:

Mutton: 2 kg
Oil: 600 to 700 ml
Onion: 800 gm( finely sliced)
Fresh curd: 500 gm
Salt to taste
Red chilly powder: 3 tbsp
Coriander powder: 4 tbsp
Turmeric powder: 1 tsp
Garlic paste: 3 tbsp
Ginger paste: 2 tbsp

Whole spices👇
Cloves: 7 to 8
Green cardamom: 6
Star anise: 3
Cinnamon stick: 1.5 inch
Black cardamom: 4
Black peppercorns: 15 to 20
Bay leaves: 5
Water cups to cook meat
When meat gets tender,then crushed fried onion,cook until oil gets separated,then desired amount of water, Cook for 10 minutes on medium flame.
At last add 2 tsp garam masala,1/4 tsp of nutmeg powder, 1.5 tsp of kewra water ,turnoff the flame,cover for 10 to minutes
