Gajrela: A Creamy Carrot and Rice Pudding

Indulge in the rich and creamy flavors of Gajrela, a delectable Indian dessert made with carrots, rice, and milk. This aromatic pudding is a perfect treat for any occasion.

Ingredients:

1 liter whole milk
1 cup grated carrots
1/4 cup basmati rice, soaked in water for 30 minutes and coarsely ground
1/2 cup sugar
1/2 teaspoon cardamom powder
1 tablespoon slivered almonds
1 tablespoon slivered pistachios
A pinch of saffron (optional)

Instructions:

Heat the milk in a heavy-bottomed pot over medium heat until it comes to a boil, stirring frequently to prevent it from sticking to the pan.

Reduce heat to low, add the grated carrots and ground rice, and stir well to combine.

Cook for 15-20 minutes, or until the carrots are soft and the rice is cooked through, stirring occasionally to prevent sticking.

Add sugar and cardamom powder, and stir until the sugar dissolves completely.

Simmer for another 5-7 minutes, or until the mixture thickens slightly.

Remove from heat and garnish with almonds, pistachios, and saffron (if using).

Tips:

For a richer flavor, you can use full-fat milk instead of whole milk.

If you don't have a grinder, you can finely chop the soaked rice instead of grinding it.

Adjust the amount of sugar to taste.

For a more elegant presentation, you can garnish the gajrela with a few drops of rose water or a sprinkle of silver leaf.
