100% quinoa fermented bread recipe

This bread is absolutely fenomenal, delicious healthy, guilt-free, no yeast, no baking powder, no eggs, dairy and gluten-free. All you need is quinoa seeds, salt and water.

Ingredients:

Quinoa 700gr
1 tsp salt
Filtered water

Directions:

1. Put 700 gr into a large bowl, cover with filtered water and let it sit overnight.
2. Next day ( after 12-24 hours ) drain and refill with fresh water (I use tap water to wash the quinoa) and rinse the quinoa as many times as needed to make the water clear (I've rinsed 5 times to get the clear water)
3. After that, let all the water drain (in 10-30 minutes, transfer the quinoa into a bowl, add 1 tsp of salt and water (add in parts so that the dough does not turn into liquid) using a blender, grind the quinoa until smooth.
4. Cover with a plate and let it sit for another 12 hours.
5. After 12 hours check your dough. It should rise slightly, become airy, bubbly. The fermentation process may take longer during the cold season or if the room temperature isn't too high. If the dough has not risen, let it stand for a few more hours, cover with a towel, put in a warm place.
6. When you got a bubbly dough it's time to transfer it to a baking pan. Before baking let it sit for 2-3 hours
7. Thank top with some seeds and bake for 60-70 minutes at 180C/390F
8. Let it cool completely, then remove from the baking pan and enjoy!
