Hope you are doing great!!! Here I am with a new Playlist!!! Breakfast Combo1 - Palappam & Onion Roast

Ingredients:
1 large onion (or 2 medium-sized onions), sliced
2 tablespoons coconut oil
1 teaspoon fennel seeds
1 Cardamom
1 small piece cinnamon stick
1 sprig of curry leaves
1 tablespoon crushed ginger
1 tablespoon crushed garlic
1 medium tomato, chopped
½ teaspoon turmeric powder
1 1/2 Teaspoon coriander powder
1 tablespoon red chili powder (adjust to taste)
1 Teaspoon pepper powder
3/4th teaspoon garam masala powder
Salt to taste
1/2 teaspoon sugar (optional)
Instructions:
Heat the coconut oil in a large pan over medium heat.
Once the oil is hot, add the fennel seeds, cinnamon stick, cardamom and curry leaves. Sauté for a few seconds until fragrant.

Add the sliced onions to the pan, add the crushed ginger and garlic, Sauté them over medium heat until they turn golden brown and caramelized. This may take 10-15 minutes. Stir occasionally to avoid burning.
Add the turmeric powder, red chili powder, coriander powder, pepper powder, garam masala and salt. Mix well and cook for another 2-3 minutes until the spices are well combined, fragrant, and the raw smell is gone.
Add the chopped tomato to the pan and cook until it becomes soft and mushy, add 3 tablespoons of water and cook for about 5 minutes.
Once everything is well cooked, Open the lid and mix well in between. At the end add some more fresh curry leaves and 1/2 teaspoon sugar(Optional) and cook for another 2 minutes.

Palappam:

Heat a non-stick palappam pan or a small wok (appachatti) over medium heat.
Pour a ladleful of batter into the center of the pan. Immediately lift the pan and swirl it in a circular motion to spread the batter thinly around the edges while leaving a thicker center.
Cover the pan with a lid and cook for 2-3 minutes until the edges turn crispy and golden, and the center is cooked and soft.
There’s no need to flip the palappam. The steam inside the pan will cook it thoroughly.

You can add an egg to it and sprinkle it with a little salt and pepper powder and Egg Palappam is ready.

Serve the spiced onion roast warm along with Palappam :) Happy cooking.
