Ingredients for the filling:

1 1/2 cups rice
2 tablespoons tomato paste
2 cups ground meat
1/2 cup onions
1 tablespoons garlic
1/2 cup parsley
1/2 cup tomatoes
1/2 tablespoon salt or taste
1/2 tablespoon mixed spices
1 teaspoon black pepper
1/2 teaspoon hot red pepper or to taste
1/3 cup very hot oil


In big bowl mix all the ingredients and sit a side .


Ingredient to add on top:
1/2 teaspoon of citric acid or 1/4 cup lemon juice
2-3 Tbsp pomegranate molasses (optional)
1 cup boiling water

6 qt instant pot
30 minutes high pressure
Do quick release

Remove the remaining liquid after cooking on a side in a bowl but if you like click on saute button for about 10 minutes in order to evaporate the remaining liquid and make the bottom of the dolma brown a little which most Iraqi like it that way

Vegetables you will need to be stuffed :

Grape leaves from a jar washed and rinsed (about 20-30 leaves)
2-3 zucchini cut in half and cored
2-3 eggplant cut in half and cored
1-2 medium onion separated
1 small green pepper . Cut from the top and clean the seeds from inside.
Extra salt and black pepper and oil
