Quick and dirty breakdown of how I like to pluck and clean pigeons. Pigeons are a luxury meat to me, and I used to sell a single breast for 32$, along with a little slice of pork belly. Commercial pigeons are going to run you about 20-25$ a piece. As far as cleaning, pigeons are the easiest birds I've ever plucked, and it only takes me about 5 minutes to process each bird, much easier than something like a goose that has tons of down, etc.
