Palak Egg Bhurji Recipe | Egg Spinach Scramble | Anda Palak Bhurji | Egg Palak | Palak Egg Fry | Egg Spinach Recipe
Palak Egg Bhurji is a delicious and healthy twist to the classic anda bhurji. Fresh spinach (palak) is cooked with onions, tomatoes, and spices, then scrambled together with eggs to make a soft, fluffy, and flavorful dish. This recipe is quick, nutritious, and perfect for breakfast, lunch, or dinner.
It pairs wonderfully with chapati, phulka, paratha, pav, or even plain steamed rice and jeera rice. You can also enjoy it as a filling in wraps, rolls, or sandwiches.
Ingredients :
5 to 6 Eggs
¼ tsp Salt (or as per taste)
2 to 3 tbsp Cooking Oil (use as per your diet restrictions)
½ tsp Cumin Seeds (jeera)
2 to 3 Dry Red Chillies (if large, cut into half)
1 sprig Curry Leaves
½ inch (5 gms) Ginger - finely chopped
12 to 15 (20 gms) Garlic Cloves - finely chopped
2 medium (150 gms) Onion - finely chopped
1 large (90 gms) Tomatoes - finely chopped
½ tsp Salt (or as per taste)
½ tsp Turmeric Powder
1 tsp Kashmiri Chilli Powder
½ tsp Coriander Powder (dhania powder)
½ tsp Garam Masala Powder
50 to 60 ml Water (to prevent the masalas from burning)
1 bunch (80 gms) Spinach (Palak) -can use more if you prefer - (washed thoroughly & chopped fine)
½ tsp Dry Fenugreek Leaves (Kasuri Methi) - dry roasted & hand crushed
2 to 3 tbsp Coriander Leaves - chopped
Note : tsp is teaspoon
tbsp is tablespoon
Use Oil as per your diet restrictions
Use Chillies as per your spice preference
Always wash curry leaves & coriander leaves before use
