Roasted Chicken with Vegetables in White Wine Sauce | One-Pan Dinner

📋 INGREDIENTS:
1 whole chicken (cleaned and patted dry)
1 red onion, wedged
4 cloves garlic, sliced
2–3 celery stalks, chopped
1½ cups baby carrots
1 (24 oz) bag honey gold baby potatoes, halved
1 cup mushrooms, halved
Fresh rosemary (washed)
Fresh thyme (peeled from stems)
1 lemon, halved
Olive oil
Kosher salt or sea salt
Pepper
Paprika
Onion powder
All-purpose herb seasoning blend
Garlic herb & wine sauce (store-bought)
1 can cream of chicken soup
½ cup white wine
½ cup chicken stock
👩🍳 INSTRUCTIONS:
Prep the Veggies: Chop celery, carrots, onion, garlic, potatoes, mushrooms, and lemon. Set aside rosemary and thyme.
Season the Veggies: In a large bowl, combine vegetables with olive oil, pepper, onion powder, and all-purpose seasoning. Toss to coat evenly.
Add to Pan: Dump veggies into a large roasting pan. Spread evenly and add rosemary and thyme.
Prep the Chicken: Pat the whole chicken dry. Rub with olive oil and season with salt, pepper, onion powder, paprika, and herb seasoning.
Roast: Place chicken on a rack over the veggies. Roast at 375°F (or as per your oven) for 25 minutes.
Add Wine & Stock: After 25 minutes, pour in ½ cup white wine and ½ cup chicken stock. Return to oven and continue roasting until fully cooked (internal temp of 165°F).
Make the Sauce: In a pan, mix cream of chicken soup with the garlic herb & wine sauce, reserved pan drippings, and ½ cup white wine. Simmer for about 15 minutes, stirring until smooth.
Serve: Plate the roasted chicken with veggies, and drizzle with white wine herb sauce. Enjoy!
