With a few careful ingredient choices this bacon, egg and potato salad is super filling but just over 400 calories.

Soft boil two medium eggs in lightly salted water
Remove the eggs and add in about 150g chopped up new potatoes
Meanwhile spray a pan and place in three chopped up bacon medallions and a finely chopped shallot and cover the pan for about five minutes
Add in the potatoes, a heaped teaspoon of wholegrain English mustard and a few glugs of apple cider vinegar before covering for about another five minutes
-Meanwhile put some salad and sliced celery into a serving bowl adding a little more apple cider vinegar to this and peel the eggs
Place the bacon, shallot and potato mixture on top of the salad and top with those eggs
