Dhaba Style Mix Veg

Preparation Time: 30 minutes
Cooking Time: 20–30 minutes
Serves: 4

Ingredients
Paneer – cut into cubes
Carrot – chopped
Cauliflower – chopped
Green beans – chopped
Green peas
Potatoes – chopped
Capsicum – chopped
Green chillies – chopped
Coriander leaves – chopped (for garnish)
Onion – chopped
Tomatoes – chopped
Salt – to taste
Red chilli powder – as required
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Black pepper powder – ½ tsp
Ginger-garlic paste – 1 tbsp
Cumin seeds – 1 tsp
Oil – as required

Method

Heat oil in a kadhai. Shallow fry the paneer cubes until golden and set aside.
In the same oil, fry the chopped potatoes until slightly crisp.
Add capsicum, green peas, carrots, green beans, and sauté lightly.
Add cauliflower and fry for a few minutes. Remove all fried vegetables and keep aside.
In the same kadhai, add a little more oil if needed. Add cumin seeds and let them splutter.
Add ginger-garlic paste and sauté until aromatic.
Add chopped onions and fry until golden brown.
Add chopped tomatoes and cook until they turn soft and mushy.

Mix in the spices: salt, red chilli powder, turmeric powder, coriander powder, and black pepper powder. Cook the masala well.
Add the fried vegetables and paneer back into the masala. Mix well.
Cover and cook on low flame for 10–15 minutes until vegetables are tender and the flavors are absorbed.

Garnish with freshly chopped coriander leaves.

Serving Suggestion
Serve hot with chapati, paratha, or naan.
