Plus we're sharing a day in the life here on our Alaskan homestead + a yummy lamb dinner with our homegrown lamb that we just butchered & processed a couple of weeks ago & a homemade blueberry ice cream recipe with hand picked Alaskan blueberries from this summer! BLUEBERRY SWIRL ICE CREAM
Ingredients:
2 cups fresh or frozen blueberries, divided
1/4 cup granulated sugar
2 TBS water
1 (14 oz) can sweetened condensed milk
1 tsp vanilla extract
2 cups heavy whipping cream
How to make it:
Combine 1 cup berries, sugar, and 2 TBS water in a small saucepan over medium heat. Cook, stirring constantly, until blueberries release juice & mixture thickens slightly. Cool syrup completely, cover & chill until ready to prepare ice cream.
Combine sweetened condensed milk & vanilla in a bowl. In a separate bowl, beat whipping cream with an electric mixer until soft peaks form. Fold about 1/2 cup whipped cream into milk mixture to lighten texture. Fold remaining whipped cream into milk mixture. (Don't over mix).
Transfer to a freezer safe dish. Sprinkle remaining blueberries on top & drizzle blueberry syrup over top. Using a thin spatula, toothpick, butter knife or something of the like, cut into berries & syrup, creating swirls. Cover & freeze several hours or until firm. Enjoy!
