Bang Bang Prawn Roll
inspired by @abigailfmarquez , @geniuseatss , and @brandongouveia ’s recipesz the video also features ‪@andy_cooks‬ because…prawns. The hybrid recipe I came up with 👇
🦐 Prawns
Wet mix: In a bowl, combine buttermilk and sriracha (or any hot sauce you’ve got).
Dry mix: In another bowl, mix equal parts corn flour and all-purpose flour. Season with salt, black pepper, paprika, garlic powder, onion powder, and optionally MSG and curry powder.
Season your prawns lightly with salt, pepper, and optionally some all-purpose seasoning.
Toss the prawns in a scoop of the dry mix and let them sit for a bit.
Add a bit of the dry mix into the wet batter until it reaches a loose pancake batter consistency.
Dip each prawn into the wet batter, then coat in the dry mix. Deep fry at 180°C (350°F) until golden and crispy.
🔥 Bang Bang Sauce
Mix together:
Good quality mayo
Hot sauce
Sweet chilli sauce
A splash of lemon juice
Gochugaru
🥗 Slaw
Thinly slice cabbage and carrot. Toss with wafu dressing right before serving to avoid sogginess.
Wafu Dressing Ingredients:
Grated onion (optional)
Olive oil or sesame oil
Equal parts soy sauce, rice vinegar (unseasoned), and mirin
If you don’t have mirin, sub in sugar to taste
Freshly ground black pepper
Toasted white sesame seeds
🥖 Assembly
I toasted a sesame milk bun and served it all up on that. My recommendation would be to not toss the prawn in the sauce but either dip the prawn in the bang bang sauce or just serve it on top of the salad and drizzle the bang bang sauce on top. When you toast it around in a bowl with the sauce there’s a high chance of breaking that beautiful golden crispy batter that you worked so hard to make - like I did in the video. The prawn came out quite nice so props to the three creators that inspired this :).
