Step-by-Step:
1. *Prepare Shrimp:* Peel, devein, halve, and mince the shrimp. Set aside.
2. *Make Dressing:* In a bowl, mix lime juice, garlic, sugar, soy sauce, fish sauce, and sesame oil. Taste and adjust if needed.
3. *Cook Shrimp in Lime Juice:* Add shrimp to the dressing and refrigerate for 5-10 minutes, letting the lime juice "cook" the shrimp.
4. *Fry Wontons:* Cut wonton wrappers into triangles and fry until golden. Drain on paper towels.
5. *Mix Herbs:* Add shallot, red chili, Thai chilies, lemongrass, mint, Thai basil, cilantro, and green onions to the shrimp mixture. Stir gently to combine.
6. *Serve:* Lay lettuce leaves on a plate, spoon ceviche on top, and serve with fried wontons on the side. Enjoy!
