Today, I will show you how to make a yummy Thai pumpkin curry soup recipe. Make sure to follow my steps and you will have a beautiful pumpkin soup with gorgeous colors. We call this dish 'Gaeng Phed Fakthong' (แกงเผ็ดฟักทอง). In Thailand, we don't really celebrate Halloween, but fun fact: in this period of time, it's the season for pumpkin, so many Thai people cook food or even Thai dessert with pumpkin during the month of October.

● 3 cups Pumpkin, cut into medium chunks
● 2 Tbsp Thai red curry paste
● 1 cup Thai sweet basil leaves
● 300 g Chicken thigh, cut into medium chunks
● 200 ml Coconut milk
● 200 ml Water/Chicken stock
● 1 Tbsp Palm sugar
● 1 Tbsp Fish sauce
