INGREDIENTS:
Chicken 500 gm
Shallots 20-25
Garlic 15 Cloves
Ginger 1 inch piece
Green chillies 2
Oil 2 tbsp
Mustard seeds 1/2 tsp
Dry red chillies 2
Turmeric powder 1/2 tsp
Red chilli powder 1 tsp
Coriander powder 1 tsp
Garam masala powder 1/2 tsp
Hot water 1/4 cup
Curry leaves 2 springs
Instructions:
To a mixer jar, add shallots, garlic, ginger, and green chilies. Crush them coarsely — do not make a fine paste. Keep it aside.
Heat oil in a kadai, add mustard seeds, and let them splutter. Then add dry red chilies and curry leaves. Sauté on low flame for a few seconds.
Add the crushed shallot mixture and sauté until golden brown. Add turmeric powder, coriander powder, and garam masala. Sauté for a minute.
Add chicken and salt. Mix well and fry on medium heat for 4–5 minutes. Add water and mix again. Cover and cook on low flame for about 15 minutes, stirring occasionally.
After 15 minutes, stir well and cook uncovered on low flame until the gravy dries up. Add a few curry leaves and mix well. Turn off the flame and serve hot with rice or chapati.
