This recipe is not only delicious but also easy to prepare. Let’s see the ingredients and method to make this delightful dish.
For this recipe, we will need coriander leaves, garlic, two green chilies, ginger, gram flour, a bundle of spinach (half a kilogram), and curd. First, I make sour curd by letting it rest, but you can also use buttermilk. Start by cleaning the spinach thoroughly with water to remove all dirt. Once clean, chop it finely using a chopper or a cutting board.
Heat mustard oil in a pan, then add curry leaves for flavor. Next, grate ginger and garlic and fry them on medium flame. Add green chilies and spinach, and cook it well for about five minutes. Cover and let it cook further if needed. Meanwhile, mix gram flour and curd together until smooth. If using buttermilk, you can skip this step.
Once the spinach is cooked, add turmeric powder, coriander powder, vegetable masala, and a pinch of salt. Mix the spices well but avoid over-spicing, as it may overpower the spinach's natural flavor. Now, gradually add the curd and gram flour mixture to the pan along with some water. Let it simmer on medium flame for at least 8 minutes. The longer the kadhi cooks, the tastier it becomes. Add salt only after the kadhi is fully cooked to avoid curdling.
For tempering, heat mustard oil and add cumin seeds, fenugreek seeds, mustard seeds, asafoetida, two red chilies, and curry leaves. Let them crackle well, then pour the tempering over the kadhi. To enhance the color, I also add a pinch of Kashmiri chili powder.
Your spinach kadhi is now ready to serve! It pairs wonderfully with rice, roti, puri, or paratha. Garnish with coriander leaves and enjoy this wholesome, flavorful dish.
