Ingredients:
Brinjal - 1 (big sized)
Ginger Garlic paste - 2 big spoons
Salt - 3/4 spoon
Chilli powder - 1 big spoon
Chicken/ Garam masala powder - 1 big spoon
Turmeric - 1/4 spoin
Coariandrum (Dhaniya) powder - 1/2 spoon
Oil - 6 spoons

Process:
1. Wash the brinjal and slice it into thick pieces. Make slits in the center
2. In a bowl add ginger garlic paste, and all masala accordingly and mix them well. Add 2 spoons of oil and mix them to blend all of them together
3. Apply this masala to the brinjal on sides.
4. Heat a pan and pour 4 spoons of oil
5. Once it is boiled, add brinjal slices in batches, one by one according to pan size and fry them.
6. Flip the brinjal slices every 2 mins and let it fry well by keeping a lid on the pan.
7. With lid on, turn the slices and fry them for a minute on each side.
8. Now remove the lid and check if there is any raw part
In the slice.
9. Lets cook for 1 more minute on each side to fry it well.
10. Once brinjal slice completely changes its color after frying, transfer the slices into a serving dish.
11. Repeat this process for remaining slices.
