Amongst the many culinary traditions that prevail in this state, an interesting one is that of Maratha-Karnataka fare. A cuisine that took birth a few hundred years ago when Marathas migrated to Karnataka and settled into the local culture and practices of the land. Over time, their food evolved to assimilate local produce and ingredients. Many of the ‘military’ eateries in and around Bengaluru trace their roots to this style of cooking, although the offerings of some have morphed beyond recognition. To find examples of this unique fare that is comparatively true to its origin, one has to travel a bit out of the city. Like this 70-year-old eating house that we discovered in Malur, a town located 50 kilometres from Bengaluru. Where rustic meaty preparations are cooked with home made masalas over wood-fired stoves.
