Onions are one of those flavorful foods that compliment almost any dish. So much so, we’ve even learned to power through the burning, watery eyes produced when chopping the vegetable.

But, have you ever wondered why do onions make us cry?

It turns out, when we dice an onion we are actually breaking up the cellular structure, which starts an entire cascade of chemical reactions. One compound produced is named syn-propanethial-S-oxide and this chemical is really good at vaporizing into the air.

Once syn-propanethial-S-oxide is in the air, it can move towards our eyes where it reacts with water to form sulfuric acid.

This strong acid is the cause of all the tears, burning sensations, and irritation in our eyes.
