I asked my friend Nappa to make the most popular and most famous dish from Verona for us one Sunday because I wanted to learn how to make it - it's a lengthly process! It's not the most appetising dish when you translate is - boiled meat with bread sauce, but it is super tasty because you have to spend a full day making the meaty broth to make the Pearà with. Pearà (this is the Veronese dialect for "peppered") is a sauce made with bread crumbs, beef and hen stock, beef bone marrow and black pepper. It reminds me so much of a dish we cook in Scotland called Stovies. It's usually served with bollito misto (mixed boiled meat) - again something that doesn't sound the most appetising) but it's the key componoent that makes Lesso e pearà (lesso is Venetian for bollito), a typical dish unique to only Verona and its surroundings.
