Grenadine syrup is a ubiquitous flavouring and sweetening agent found behind every bar. The general consensus on this syrup was pomegranate was the key ingredient, but historically and specifically in North America, it may have been made as a flavouring that was similar to Clove-Pink flowers, which had a clove-like aroma. In this recipe and many others, clove is a keep component of the grenadine syrup. And though the recipe contains a few drops of clove oil, you can not identify the clove in the final syrup, and it blends in with the other ingredients to create a fruity flavour that is appealing and interesting.

Grenadine Recipe (1901)

Oil of cloves, drops 6
Oil of orange peel, drops 18
Tincture of ginger, fl dr 1
Vanilla extract, fl dr 1½
Diluted phosphoric acid, fl dr 4
Maraschino liqueur, fl oz 2
Tincture of cochineal, fl oz 2
Distilled water, fl oz 2
Alcohol (90%) enough to make fl oz 16
*fl dr = fluid drams
