On days when it’s raining and you don’t feel like going anywhere, it’s perfect to stay home and spend a lazy day with the cats! Today, I made a dessert that I’ve been craving for a long time, trying to recreate the egg pudding that’s easily found in convenience stores in Taiwan and Japan. I'm also sharing my method with you all. Although it’s not exactly a tutorial video, for me, it’s a great way to relieve homesickness after immigrating! Part A: Brown Sugar
•⁠ ⁠1/2 tsp (1g) gelatine powder
•⁠ ⁠50g water
•⁠ ⁠25g dark brown sugar

Part B: Pudding
•⁠ ⁠2 tsp (8g) gelatine powder
•⁠ ⁠230g fresh milk
•⁠ ⁠20g double cream
•⁠ ⁠100g water
•⁠ ⁠20g condensed milk
•⁠ ⁠3 eggs
•⁠ ⁠1/4 tsp vanilla extract

Part C: Brown Sugar Syrup
•⁠ ⁠Brown sugar to water ratio = 1:2


Recipe:
Brown Sugar Base
 1.⁠ ⁠Mix a small amount of water (approximately 2 tsp) with the gelatine powder.
 2.⁠ ⁠Add the brown sugar to 50g of water and gently shake to mix.
 3.⁠ ⁠Heat on low until the brown sugar starts bubbling, then turn off the heat.
 4.⁠ ⁠Add the brown sugar liquid to the gelatine mixture and stir well.
 5.⁠ ⁠After cooling, pour into pudding cups and refrigerate.

Pudding Steps
 1.⁠ ⁠Mix the gelatine powder with 30g of milk.
 2.⁠ ⁠Add the remaining milk, cream, condensed milk, and water to a pot, heating until small bubbles form, then turn off the heat.
 3.⁠ ⁠Pour the gelatine mixture into the milk mixture.
 4.⁠ ⁠Separate the egg whites from the yolks, using only the yolks.
 5.⁠ ⁠Add the vanilla extract to the egg yolks.
 6.⁠ ⁠Pour the milk mixture into the egg yolks, stirring continuously.
 7.⁠ ⁠Strain the pudding mixture twice.
 8.⁠ ⁠After cooling, pour the pudding mixture into the cups with the brown sugar base.
 9.⁠ ⁠Refrigerate the pudding for at least four hours to set.
10.⁠ ⁠Pour the brown sugar syrup over the pudding before serving.
