Hello Friends! Today I’m kicking off the 2024 Halloween season with a Fall Halloween decorate with me marathon! I know it may seem early for some of you, but I love to get all the ideas out to you guys asap and I’m just too excited to wait! Jack-o-lantern stuffed pepper dinner recipe:
Ingredients: 1 lb. lean ground beef (I use 97% lean)
1 medium onion chopped
1 can petite diced tomato (drained)
1 green bell pepper chopped
Orange peppers (qty depends on how many you want to make)
1 package of cooked brown rice
2 tbsp of greek seasoning
½ tsp salt
½ tsp pepper
½ cup low fat shredded mozzarella cheese
Directions: Cook the ground beef and the onion in the skillet. Once cooked, add all the seasonings and mix. Next, add the tomatoes and peppers and saute for about 3 more minutes. Next, add the brown rice and once mixed, add the cheese to the top. Carve your jack-o-lantern faces on your peppers and then stuff them with the mix. I topped mine with a little more cheese and then I put them in the air fryer for 3 minutes. Enjoy!
