Cherry choc chip cookie

200g caster sugar
125 g unsalted butter
2 eggs
300g plain white flour
5 g baking powder
Red food colour
150g pitted cherries
150g chocolate chips


Method
1. Mix the butter and sugar on high speed in a kitchen mixer for about 10 minutes until the mix is light and fluffy.
2. Add one egg and mix 2 minutes, add the second egg and mix 2 minute, add a little red food colour ( only a little you dont want it too red).
3. Sift in the flour and baking powder mix well then add the chocolate chips and chopped pitted cherries mix and fridge for at least an hour.
4. Portion into 50 gram balls.
5. Bake 170 c for 12-14 minutes, allow to cool.
