‘Duffin’s’ are mix between a doughnut and a muffin! I cannot tell you how excited I have been to show you guys this super quick and easy tutorial! They are just utterly delicious, soft and fluffy! They took under an hour to make (and eat) looking forward to seeing your versions. All quantities, method, alternatives are listed below! Please do read through the recipe before you begin to make yourselves familiar.

Ingredients -
125ml full fat milk
1 Egg (50ml Condensed Milk for eggless)
85 ml oil (sunflower or vegetable)
1/2 tsp Vanilla extract
200g self raising flour
100g caster sugar for mixture
150g caster sugar for dusting
Jam
100g butter

Tools -
mixing bowl
Spatula
Oil / non-stick spray
Cupcake tin - Metal or silicone (you can use use cupcake/muffin cases)
Parchment
Spoons

Method -

1. Pre-heat your oven to 185c/190c
2. Add milk, oil, egg and vanilla extract to a bowl and whisk with a fork
3. Add in flour and sugar and combine together. Do not worry too much about any lumps but do ensure that everything is well combined. Over mixing this can result in your Duffin’s becoming hard and not soft like you want them.
4. Place a spoonful into your cupcake tin as your first layer
5. Next, add a small dollop of jam into the centre.
6. Add your finally layer of the mixture on top.
7. Place in the oven for 18-20 minutes
8. Begin melting 100g of butter in a large frying pan on a low heat 5 minutes before your Duffin’s are finished baking. Allow your Duffin’s to cool for a few minutes before removing them. They can be very hot so please be careful.
9.Remove your Duffin from the cupcake tin and roll around in the melted butter until completely covered.
10. Place the Duffin in a tray or bowl of 150g caster sugar and roll around again until covered. These taste best when fresh out of the oven and warm.

Alternatives and Tips -
You can replace your egg for 50g condensed milk or an egg replacer.
You can create any size Duffin’s big or small depending on the size of your cupcake tin. They can be great as bite size.
Caster sugar can be replaced for granulated sugar.
If you only have plain flour, you can add 3/4 tsp of baking powder to the 200g of flour.
You can use melted Margarine to coat your Duffin’s.
Vanilla extract is not essential.
