Today's video shows the final steps in the preparation of the shop for meat cutting. Not having a dedicated building for butchering, every year the equipment must be relocated from storage and set up once again in the workshop. Storage, in this case, is inside the walk-in cooler. It's sealed, clean and kept ready to work. Some of the equipment, like the Biro meat saw is stored disassembled because its safer to move back and forth without the tall tower installed. When we got it 30 years ago some of the cast aluminum housings were already cracked or broken. We do not want to further the damage.
So by the end of the video all that's left to bring in is the Weston CG-15 vacuum sealer and the portable scale for weighing ten pound batches of sausage for seasonings and well.... that and a few hundred pounds of pork.
