First Ingo Boehme is showing you how the sound is changing if you loosen the string. Than he demonstrated that the string can snap if tightened to much.
When he inserts the new string he uses a plier to gently tighten the loop around the nail. Next the peg is turned counterclockwise 3-7 times so the peg is pushed out of the wood and you can see the first thread of the peg emerging from the wood. The peg will be sticking out higher than the other pegs. . The string is inserted through the peg and cut to size approximately 2 inches long. Than the end of the string is bent as shown in the video and the string is tightened.
