Good morning dear friends! An outdoor barbeque is a great way, to enjoy the warm summer weather, with your friends and family. Today I'm going to share with you a perfect side dish to go with to your grilled proteins. You can also enjoy this simple, flavour packed, healthy salad as a vegetarian main.

Today's recipe, is a Greek style roasted beetroot salad, with feta cheese (or goat cheese), salad greens, toasted walnuts and a refreshing orange vinaigrette. Roasting beetroot brings out their natural sweetness and earthy flavour. Bursting with fresh citrus, this sweet and tangy orange vinaigrette, is a flavorful dressing which brings the salad together. This colorful salad is delightfully simple to make. So delicious!

▼ Ingredients:

● To roast the beetroots
1.Beetroots - 2 numbers
2.Olive oil - To drizzle
3.Fresh or dried thyme - 1 tbsp.
4.Salt and pepper to taste

● For the vinaigrette dressing: (Homemade salad dressing)
1. Red wine vinegar - 1 tbsp.(Or balsamic vinegar)
2. Garlic Oil - 3 tbsp. Or
Olive Oil - 3 tbsp. With 1 or 2 garlic cloves (finely minced)
3. Honey - 2 tbsp.
4. Orange zest - 1 orange
5. Orange juice - ½ orange
6. Dijon mustard - 1 tsp.
7. Salt and pepper to taste

● Other ingredients for the salad
1. Walnuts - 100 grams
2. Feta - 200 grams (Or Goat cheese)
3. Salad leaves - 150 grams (Arugula / baby spinach / rocket)
I'm using arugula and romaine, green and red lettuce mix
