I believe many of you has tried cold tofu with preserved egg (thousand-years egg) and pork floss🥚🥚. This dish can be prepared in just a few minutes without cooking, just mix the chilled tofu with preserved egg, hot & sour sauce, pork floss and chopped springs onion😍😍. It's very simple and tastes great😋😋.
Usually many people uses preserved eggs to match this dish, but this time I added three-colour eggs as a combination🥚🥚. The three different types of eggs are free range eggs, salted eggs, and preserved eggs. Combine these three kinds of eggs in the empty egg shell and steam them. It becomes a beautiful three-colour egg💖💖. Although it takes a little more time to make this three-colour egg😅😅, the result is very satisfied😍😍. With the silken tofu pudding and the fragrant sauce, it is worth it👍👍. Those who like it may give it a try. It is indeed a delicious and refreshing dishes🥰🥰.

****RECIPE****

*Three-colour eggs with Soft Tofu Salad*
Ingredients :
1.Soft Tofu 300g
Tofu sauce 3- 4 tbsp
2.Pork floss x 3 tbsp
3.Spring onions x 2 tbsp
4.Three-colour eggs x 2
5.Preserved eggs x1
6.Sesame seeds x1 tsp

Methods :
Mix the tofu sauce ingredients well
. Take the cold tofu out from the refrigerator，and drain excess water
Place tofu on a serving plate
. Then top with 3-4 tablespoons of tofu sauce
. Spread the pork floss, diced spring onions.
Add three-color egg and preserved egg
. Sprinkle some sesame seeds and enjoy immediately

**Tofu sauce **
Ingredients:
1.Soy sauce 2 tbsp
2.Aged Vinegar 1 tbsp
3.Oyster sauce 1 tbsp
4.Sugar 1 tsp
5.Sesame oil 1 tsp
6.Sichuan pepper oil 1 tsp

Chilli oil 2 tsp

Methods:
Combine all the ingredients for the sauce and stir until the sugar is dissolved.

**Three-colour eggs
**
Ingredients:
1.Eggs shells x 5-6 pcs
2.Egg white 200ml
3.Preserved egg x1
4.Salted egg x1
5.Cornstarch x 1 tsp
6.Water x 20ml

Methods:
Pierce the egg with a small needle to make a small hole.
Pour out the egg liquid.
Prepare 200ml egg white liquid, add 1 teaspoon cornstarch with 20ml water
. Sieve the egg white mixture.
Put the egg white mixture , chopped salted egg and preserved egg into the egg shell
. Steam on low heat for 20 to 25 minutes
