Kuih Lapis (steamed layer cake) is a popular snack in Indonesia, Malaysia, Singapore and Brunei. IN INDONESIA it is called kue lapis. LAPIS is literally means layer in Malay. This steamed layered cake/ pudding is made with rice flour and all purpose flour. Some will add tapioca flour, corn flour. But mine is the simplest form. Its very easy to make. JUST the layered should be steamed properly.

This is one of my favourite. When I was a little girl, I enjoyed eating this kuih by peeling the different coloured layer by layer


1cup a purpose flour / Maida
1cup rice flour
1cup sugar
5cups coconut milk
Pinch of salt
Coloring pink or colours of your choice

Method
1. COMBINE all above ingredients, whisk well and strain. BATTER should be smooth.

2. Pre-heat a 5in ( depends of the layer.. the smaller tray the layer will be more.) greased tray for 5 minutes in a steamer.

3.Pour 2/3 ladle of white mixture into the tray and steam using medium heat for 6minutes and alternate another ladle of red mixture on top and steam for another 5 minutes.
Repeat steps until the mixtures are used

Last top layer should be in bright red (just add a drop of red colouring and stir well)

Steam for 15 minutes and cool thoroughly before cutting into slices.
