ALLEPPEY CHICKEN
Preparation time: 35 mins
Cooking time: 45 mins
Serves: 6

Ingredients
MAGGI Coconut Milk Powder - 100g
Cashew nut - 50g, broken into small pieces
Water - 4 cups, (600 ml)
Coconut Oil - 2 tbsp
Fennel seeds - 1 tsp
Dry Red Chillies - 6, broken into two
Ginger - 1½ tbsp, chopped
Garlic - 1½ tbsp, chopped
Onion - 4, finely chopped
Cinnamon - 2pcs, 1” stick
Coriander powder - 4 tbsp
Turmeric powder - 1 tsp
Chicken - 1kg, curry cut
Salt - To taste
Black pepper - 2 tbsp, crushed
Green chillies - 10 pcs, whole
Coriander leaves - 1 tbsp

Seasoning
Coconut oil - 1 tbsp
Shallots - 5, sliced
Curry leaves - 2 strings

Method:
1. Wash & soak thecashew nuts in 1 cup of water for ½hour, drain water and make a fine paste in a mixer grinder.
2. Heat 2 tbsp of coconut oil in a thick bottom pan, add fennel seeds, roast it, add dry red chilli, ginger, garlic and saute till the smell is gone.
3. Add onionsand saute till transparent, add cinnamon, coriander powder, turmeric powder and sauté it for one minute.
4. Add chicken, salt and mix well, add 1cup of warm water and cook until the chicken is just cooked.
5. Add 1 tbsp of crushed black pepper, cashew paste, mix well and cook until the raw flavour of cashew is gone.
6. Add green chillies and cook for another 2 minutes.
7. In a bowl mix MAGGI Coconut Milk Powder with 2cups of warm water, add it to the above chicken mixture, and simmer for 5 minutes.



8. Heat1tbsp of coconut oil, add shallots, sauté till golden brown, add curry leaves and sauté till the leaves are crisp.
9. Add the above seasoning to the cooked chicken curry.
10. Garnish with chopped coriander leaves and 1tbsp of crushed pepper.
11. Serve hot with rice or appam.
