I've wanted to try cooking some beef ribs over live fire for ages, so when I got my hands on these unbelievable dino ribs, I knew it was time! The Kadai felt like the perfect tool for the job, although the Somerset Grill would have done a brilliant job too.

Like I always seem to, I left it way too late to start the cook so I was under pressure from the start to get the ribs cooked to a decent standard.

This was a super fun, immersive cook and something I'll definitely do again - it'd be an amazing centre piece to have hung over the fire as friends arrive for dinner!

As always I'm open to hear any tips or advice about the cook that I haven't already pointed out myself, and of course answer any questions.
