If your sensors use piezo ceramics, your electronics could be at risk of damage from the pyroelectric effect.

Large charges can be generated in piezoceramics by a change in temperature, known as the pyroelectric effect. Low temperature piezoelectric materials such as PZT can suffer from this effect and lead to the damage of equipment or present an electric shock.

In this video, a PZT disc was heated to 200 °C and allowed to cool without earthing between the electrodes. You can see the amount of energy released when shorted - this could cause serious damage to any connected electronics.
