Makhani Mac and cheese - Ramen with Raita Ep 2
no italians were harmed in the making of this video 😂

Yes it’s not traditional, but that’s what this series is about! and it’s YUM! We smacked it into our faces @mouldingdough

For the gravy
1 tbsp butter + 1 tbsp oil (more for later)
1 tsp cumin seeds
1 cardomom
2 cloves
1/2 inch piece cinnamon
1 large onion roughly chopped
6-7 cloves of garlic
1 inch piece of ginger
1 green chilli
2 dried kashmiri chillies
2 tbsp chopped cashews
3-4 tomatoes, chopped
1 tsp coriander powder
1/2 tsp garam masala

For the cheese sauce
2 tbsp butter and oil
2 tbsp plain flour
2 cups milk
1 1/2 cup of mixed cheeses - I used 1 cup cheddar, 1/4 each processed and mozzarella (more for later)
Salt and pepper to taste

1 cup raw macaroni

Heat butter and oil in a Kadhai, add cumin seeds, along with whole spices and let it saute for 30 seconds
Now add the onions and cook for 2 mins.
Add chilli, garlic and ginger and cook again for 2 mins.
Now add the tomatoes, cashews, dried red chillies, salt, coriander and garam masala.
Let that cook for 5 mins, then add 1 1/2 cup water and cover and let it boil till softens. Let it cool down and blend into a smooth puree.

For the cheese sauce:
heat butter and oil, add the flour and whisk it in till it changes color slightly.
Slowly add the milk, whisking constantly so there are no lumps.
Once it thickens, add the cheese, salt and pepper and mix it in.

Finally steps:
heat more butter in a pan, add the makhani gravy back to the pan after putting it through a sieve.
Add 1 tsp kasuri methi and let it simmer for 4-5 mins.
Now add the cheese sauce to this along with the boiled macaroni (only 80 percent cooked) along with a little pasta boiling water if needed to loosen the sauce. The sauce will evaporate and thicken in the oven if you’re baking it, so err on the side of more sauce.
Mix more cheese - whatever ratio you want.
Add more cheese on top and bake at 180C for 20 mins or till the top is light golden or eat as is!
