Ingredients:
For the Cake:
150g (3/4 cup) granulated sugar
Zest of 2 large lemons
110g (1/2 cup) softened butter
30ml (2 tbsp) vegetable oil
2 large eggs (at room temperature)
30ml (2 tbsp) lemon juice
5g (1 tsp) baking powder
190g (1 1/2 cups) all purpose flour
3g (1/2 tsp) salt
120ml (1/2 cup) milk
1 tsp vanilla extract (optional)

For Lemon Glaze:
1/3 cup icing sugar (50g)
1-2 tbsp lemon juice

Important Information and Tips:
I used an 8x3x3 inch (approximately 21 cm x 8 cm x 8 cm) loaf pan. Feel free to use a different size/style and readjust the ingredients and baking time accordingly.
Ensure that your loaf pan is greased and floured or you can line it with baking paper.
Feel free to use any other glaze, make the glaze thicker, or leave the cake as is.
