Welcome to Luxe Journey Vlog! I'm Marsharine, and today I'm baking something extra special.

Gluten Free Corn Muffin
(Preheat Oven to 400 degrees)
Ingredients:
1 Cup gluten-free flour
1 Cup Gluten-free Corn Butter Milk Meal Mix (or plain corn meal)
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon xantham gum
1/4 cup sugar or your choice of sugar alternative in the same measurement. Reduce milk by 1/4 cup if you're using a liquad sweeter such as agave.
1 & 1/4 cup Milk (Dairy or dairy free)
2 large eggs
1/4 cup melted butter or oil (any butter will do)
Hummus or 1/2 cup corn kernel (optional)
Grated cheese (optional)

Bowl 1: Combine wet ingredients
Bowl 2: Combine dry ingredients
Than incorporate both wet and dry ingredients into bowl 2.

Pour into well greased muffin tins ( lined optional). Sprinkle grated cheese on top (optional). Bake in a 400 degrees oven for 20-25 minutes and enjoy!
