Tomato Pachadi is a popular South Indian chutney made with ripe tomatoes and a blend of spices. It is tangy, spicy, and pairs wonderfully with rice, dosas, idlis, or even chapatis. Here's a simple recipe for Tomato Pachadi.Preparation of vankay tomato roti pachadi

4 medium-sized tomatoes
10 long Brinjals
10 green chilies (adjust to your spice level)
1 small onion (optional)
1 tablespoon oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon turmeric powder
A few curry leaves
Salt to taste
1 tablespoon tamarind pulp (optional, for extra tang)

Instructions:
1. Cook the Tomatoes and brinjal :
Wash and chop the tomatoes and brinjal into pieces. If you prefer a smoother texture, you can cut into small pieces
2. Prepare the Tempering: Heat a pan and add a little oil. heat a tablespoon of oil Add urad dal, groundnuts fry them until they turn in to crunchy, later Add green chilies (either slit or finely chopped),
later add chopped tomatoes and brinjal and cook them on medium heat for about 5-7 minutes, stirring occasionally until they become soft and mushy.
3.In a mortar add garlic pods, jeera and rough crush with the help of pestle once it turns into smooth texture add urad dal, groundnut and also add tamarind salt this stage for extra tanginess blend it well and make rough paste with help of pestle.
4.Add the cooked tomatoes and brinjal pieces make rough paste with help of pestle, and keep aside
5.Heat a pan and add a little oil. Once the oil heats up, Add mustard seeds and let them splutter. Then add cumin seeds, turmeric powder, hing (asafoetida), curry leaves,. Sauté for a few seconds until the spices release their aroma.
6.combine the mixture with spices add just the spices as per your taste .
Garnish with freshly chopped coriander leaves (optional) and serve the Tomato Pachadi warm with rice, chapati, or dosa.
