Baby Prawns with Spring Onion Recipe
Cooking time: 15-20 minutes
Serves: 2-3

Ingredients:

300g baby prawns (cleaned and washed)

2 tbsp mustard oil

1/2 cup spring onion (white portion, finely chopped)

1/2 cup spring onion (green portion, finely chopped)

1 tbsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp cumin-coriander powder

1 tsp red chili powder

1/2 tsp Kashmiri red chili powder

1 tsp fish masala

Salt to taste

1 medium tomato (finely chopped)

Optional: Fresh coriander for garnish


Instructions:

1. Prepare the Prawns: Clean and wash 300g of baby prawns thoroughly. Set aside.


2. Heat Oil: Heat 2 tablespoons of mustard oil in a pan until it reaches its smoking point. Reduce the heat.


3. Cook Spring Onion Whites: Add the white portion of 1/2 cup spring onions and sauté for 2-3 minutes until fragrant.


4. Add Ginger-Garlic Paste: Stir in 1 tablespoon of ginger-garlic paste and cook for about 5 minutes.


5. Add Spices: Add 1/2 tsp turmeric powder, 1 tsp cumin-coriander powder, 1 tsp red chili powder, 1/2 tsp Kashmiri red chili powder, 1 tsp fish masala, and salt to taste. Mix well and cook for 2 minutes.


6. Add Tomato: Add the chopped tomato and cook until it softens and blends with the spices.


7. Add Prawns: Add the cleaned baby prawns to the pan, stir well to coat them with the masala, and cook for 2-3 minutes. Cover with a lid for even cooking.


8. Add Spring Onion Greens: Once the prawns are cooked, stir in the green portion of the spring onions and cook for 1-2 minutes.


9. Serve: Garnish with fresh coriander (optional) and serve hot with steamed rice or flatbread.
