In this video I show you step by step instructions on how to make a German bratwurst that is poached in beer and seasoned onions, then grilled for that snappy bite that you are going to love.

Ingredients For Sausage
2,268 grams of Pork Should (pork butt) or 5 pounds
41 grams of kosher salt (1.8 % of total weight of meat) You can adjust salt to your liking
6.5 grams of white pepper
1.2 grams of powdered ginger
1.25 grams of mace powder
6 grams of marjoram leaves
4.3 grams of coriander powder
1.3 grams of caraway powder
4 grams of mustard powder
5.66 grams of cure #1 (0.25% of total weight of meat) (optional unless you plan to smoke at low temperatures or wanting to use as a preservative)
2 whole eggs
226.80 grams of heavy cream. (10% of total weight of meat, but adjust to your desired amount. 5% may do it as it did in the video.
