Also, if you are keen on trying it with your own home made dry cure, a simple home made alternative recipe is as follows:
Per Kg of Pork use the following
- 25g Salt
- 15g Sugar
- 1.5g Curing Salt (12% Sodium Nitrite)

Usually the curing salt will have to be purchased from somewhere that supplies ingredients for making small goods.

This is a good base, and then you can add more sugar, or salt, or other herbs and spices to add unique flavors!
