INGREDIENTS: makes 24 cookies
Gel:
2 tsp Potato Starch
1.5 tsp Tapioca Starch
1/2 tsp Baking Powder
2 tsp Whole psyllium husk
50g water
Cookie Dough:
570g Crazy Good Gluten Free All-Purpose Flour
270g Butter, unsalted, cubed (or vegan alternative)
185g Molasses (blackstrap or fancy for milder)
150g Cane sugar
2.5 tsp Baking soda
2 tsp Ground ginger
1/2 tsp Ground cloves
1 tsp Ground cinnamon
Pinch of salt
