In this video we show you the basics of smoking a brisket on the brand new M1 from M Grills. This is true all wood smoking known as "stick burning" which is our preferred method for the best tasting barbecue. It's extremely easy to do on the M1.

Cooking Notes:
We are simply going to smoke this brisket with post oak wood. When the brisket hits an internal temperature of 170 degrees, we will take it out and wrap in pink butcher paper. Once we do so, you may continue the wood burning fire or just add charcoal in the firebox to finish the cook since the brisket will not take on any more smoke. Once the brisket is back on the cooker, we are going to continue cooking until the brisket hits an internal temperature of 205 degrees. Once we hit 205, we will pull the brisket off the cooker and let rest for AT LEAST 1 hour in the oven or put inside an ice chest (cooler) to rest.
