This week on the homestead we are preparing for some new additions! A neighbor gave us a run-in barn that Dennis took apart, hauled out in the snow, and rebuilt next to the cabin. We got buried in snow, but that didn't stop us from finishing the project of rebuilding! We also stocked the pantry with a new batch of Fermented Garlic Honey and cooked up some homemade food over a fire while we worked to keep warm!

HOMESTEAD RECIPES

Fermented Garlic Honey
-5-6 bulbs high quality garlic
-2-3 C high quality raw organic honey
Sterilize a pint mason jar. Peel the garlic. Add a thin layer of honey on the bottom of the mason jar, top with garlic cloves, cover with more honey. Shake to make sure all the cloves of garlic are covered. Use a fermenting weight to keep garlic submerged, or a smooth river stone.
Keeps for a long, long time.

Chai Spiced Sourdough Pancakes
-1/2 c sourdough discard
-1/2 c water
-1 egg
-2 tbsp maple or honey
whisk together
-2.5 c flour
-1 tsp salt
-1 tbsp chai spice
whisk until combined, cook on skillet 2-3 min on each side until golden.
