--Ingredients

Oil 1 tbsp
Chopped ginger 10g
Long beans ¼ cup
Green peas ¼ cup
Chopped carrot ½ cup
Chopped capscicum ½ cup
Eggs 2
Boiled rice 1 cup
Tomato sauce 2 tsp
Soy sauce 1 tsp
Fruit vinegar 1 tsp
Salt as required
Sugar (optional)

--Prepare egg fried rice

Use a non-stick pan or kadhai.
Once the kadhai is hot, add oil.
Once the oil is hot, add minced ginger and saute for a minute.
Add chopped long beans, green peas,chopped carrot, chopped capsicum and saute for 2 minutes.
Then, move the sauted vegetables to a side of the pan and add eggs.
Once the eggs are fried, then mix the eggs with the vegetables.
Add boiled rice, tomato sauce, soy sauce and fruit vinegar and mix well.
Cook for 3 to 4 minutes in a medium flame.
Add salt, sugar and mix well.
Serve hot!!
